Cakies

I like to call these sweet babies, Cakies!  I had a bit of a wonderful accident about a month ago when I was aiming for crunchy cookies and ended up with a soft mound that was really moist and "crumable"(I got it from the MGD dictionary), just like cake.  So, Cake + Cookies = Cakies.  You knew that was coming  :)

This recipe is an adapted and more simple version of this recipe.    I used honey instead of sugar, whole wheat flour instead of white flour and a little more peanut butter.  This is a quick "whipped up" kind of treat and it is, of course, ridiculously simple to recreate.  Let's do this:

1 banana mashed
1/2 tsp vanilla
1 cup old fashioned oats
1 cup whole wheat flour
1 tsp salt
1 tsp cinnamon
1/4 nutmeg
1/2 honey
1/3-1/4 cup peanut butter (I'm absolutely obsessed with peanut butter and thus my measurement would be on the higher end)
1/4-1/2 cup of non-dairy chocolate chips or carob chips (Carob chips can be found at Whole Foods and almost taste like a mix of raisins and chocolate.  It's healthy goodness.)


Throw everything into a bowl and mix until fully incorporated.

A nicely mixed batter and it's Salmonella risk-free........The exact reason why I never ate cake/cookie batter.  Listen, I don't play that.

Using a spoon, scoop the batter onto a tray.  Bake in the oven at 350 degrees for 15 mins.

Perfect.

  1. I have a HUGE sweet tooth. I think this will satisfy it. It's so simple and I don't need much ingredients. :) Nowadays, vegan recipes seem like they need a million exotic ingredients. But your recipes are easy and cheap. And for this college vegan, I am SOLD! Thank you for your Bangin' Bird Food recipes. :)
